All about celiac disease, a disease originally diagnosed in A.D. 100. The diagnosis of celiac disease is certainly increasing, but is it becoming more common, or are we just looking for it? We don’t know yet.
This article explains what celiac disease (inflammation caused by gluten ingestion) is and what it isn’t (“wheat allergy”). I get the impression that the FDA should be taking this more seriously, as “gluten free” labeling is purely voluntary these days, and the rate of disease is around 1 in 133.
